Chocolate & Raspberry Layered Chia Pudding
So this has quite a mousse-y texture and works best if you use a good quality dark chocolate and make it at least 24 hours in advanced!
- Chia seeds, 4 tbsp
- Natural Yogurt, 500g
- Dark Chocolate of your choice, 2-3 rows depending upon how intense you would like it
- Raspberries, a handful
- Cocoa Powder, 2 tbsp
- Mint to garnish (optional)
First take your NUTRiBULLET Pro 1000 Series Extractor Blender 9-Piece Set , 0.93 L, 1000 W (other blenders and extractors are available on the market… are they really? Nothing beats a Nutibullet, in my opinion!!). Place half the yogurt into the cup and add all the raspberries, blend. Once its smooth, stir in 2 table spoons of chia seeds and place in a bowl. Refrigerate.
Repeat the process with the remaining yogurt, dark chocolate and cocoa. Stir in the last 2 table spoons of chia seeds, transfer into a bowl and refrigerate.
Leave over night or for the day, 24 hours really is the best. Then layer in a lovely glass or transparent bowl and top with your mint leaves!
